Christine’s Recipe of the Day: Hot Artichoke and Spinach Dip, YUMMY!
Artichoke and Spinach Dip with tortilla chips
This is featured in Sweet Misbehavin’ a paranormal sweet erotic romance to be published in March 2014. It is also a favorite of the family and typically enjoy this appetizer on Thanksgiving and/or Christmas. It is a low cal/fat version of the Applebees recipe.
Total time: 35 minutes
Prep time: 5 minutes
Cook time: 30 minutes
Ingredients:
1 (10) oz box frozen chopped spinach, thawed, with water squeezed from the spinach
1 (14 ) oz can artichoke hearts, drained and roughly chopped
1 cup low fat mexican cheese blend
1/2 cup Mozzarella cheese
10 oz prepared low fat alfredo sauce
1 clove minced garlic
4 oz softened low fat cream cheese. Do not use the no fat cream cheese. No fat does not cook well.
Pepper optional
Directions:
1. Preheat oven to 350 degrees
2. Combine ingredients thoroughly in a bowl and spread mixture into a small baking dish (8 X 8) works great.
3. Bake for 25 to 30 minutes or until cheeses are bubbling and melted.
4. Serve with chips or bread and enjoy. (We have served this in bread bowls.)
